  • 2 large eggs (room temperature)
  • ½ cup granulated sugar
  • ½ cup melted butter
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ÂĽ teaspoon salt
  • 2 cups chopped apples (Pink Lady, Gala, or Honeycrisp)

Instructions

  1. Preheat your oven to 350°F. Grease and flour an 8 x 5 inch loaf pan or line with parchment paper.
  2. In a small bowl, whisk together brown sugar and ground cinnamon; set aside.
  3. In a large mixing bowl, whisk eggs and granulated sugar until blended. Stir in melted butter and vanilla until smooth.
  4. Add flour, baking powder, baking soda, and salt to the wet mixture; stir gently until just combined.
  5. Fold in chopped apples without overmixing.
  6. Pour half the batter into the prepared loaf pan; sprinkle three-quarters of the cinnamon sugar mixture over it.
  7. Spread remaining batter on top; sprinkle leftover cinnamon sugar and swirl gently with a knife.
  8. Bake for 35 to 45 minutes or until a toothpick comes out clean. If browning too quickly, tent with foil.
  9. Allow cooling completely in the pan before slicing.
