  • 0.5 cup vegetable oil

  • 0.5 cup apple butter
  • 0.25 cup brown sugar
  • 0.5 cup flour
  • 0.25 cup cold butter

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine 2 cups of flour, 2 teaspoons of baking powder, 0.5 teaspoon of salt, 0.75 cup of granulated sugar, and 1 teaspoon of cinnamon.
  3. In another bowl, whisk together 1 cup of milk, 0.5 cup of vegetable oil, 1 large egg, and 1 teaspoon of vanilla extract until well blended.
  4. Gradually pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. In a small bowl, mix together 0.5 cup of apple butter, 0.25 cup brown sugar, 1 teaspoon cinnamon, 0.5 cup flour, and a pinch of salt.
  6. Cut in 0.25 cup cold butter using a fork or pastry cutter until crumbly.
  7. Line a muffin tin with muffin liners or grease it lightly.
  8. Fill each muffin cup halfway with the batter.
  9. Spoon about a tablespoon of the apple butter swirl mixture on top of each muffin batter portion.
  10. Use a toothpick or knife to gently swirl the apple butter mixture into the batter.
  11. Bake in the preheated oven for about 22 minutes or until golden brown.
  12. Allow muffins to cool in the pan for about five minutes before transferring them to a wire rack to cool completely before serving.
