  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter, room temperature
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 3/4 cup buttermilk
  • 2 teaspoons vanilla extract
  • 2 medium apples, diced
  • 1/3 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (180°C). Grease and line a 9 x 4 inch baking tin with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a large mixing bowl, cream butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  4. Gradually fold half of the dry mixture into the wet ingredients. Then mix in buttermilk until combined, followed by the remaining flour mixture.
  5. In another bowl, combine diced apples with brown sugar and cinnamon.
  6. Pour half of the batter into the prepared tin, layer half of the apple mixture on top, swirl gently with a knife. Repeat with remaining batter and apples.
  7. Bake for 55-65 minutes or until a toothpick comes out clean from the center.
  8. Allow to cool in the tin for about 10 minutes before transferring to a cooling rack.
