  • 1 1/2 tsp ground cinnamon

  • 1/2 cup milk
  • 1/4 cup melted butter
  • 2 tbsp powdered sugar (for glaze)
  • 12 tbsp milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a muffin tin.
  2. Toss diced apples with cinnamon and a sprinkle of sugar; set aside.
  3. In one bowl, whisk together flour, brown sugar, baking powder, cinnamon, and salt.
  4. In another bowl, combine eggs, milk, and melted butter until well blended.
  5. Gradually mix the wet ingredients into the dry until just combined; gently fold in spiced apples.
  6. Spoon batter into the muffin tin filling each cup about three-quarters full.
  7. Bake for 20-25 minutes until golden brown; check doneness with a toothpick.
  8. While warm, whisk together powdered sugar and milk for glaze and drizzle over muffins.
