  • 1 tsp. salt
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. ground allspice
  • 1/8 tsp. ground cloves
  • 2/3 cup vegetable oil
  • 2 large eggs, room temperature
  • 3/4 cup brown sugar, packed
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream, room temperature
  • 1 tsp. pure vanilla extract
  • 23 large honey crispy apples, grated

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×9-inch nonstick pan with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, salt, and spices.
  3. In another bowl, combine vegetable oil, eggs, sugars, sour cream, and vanilla until smooth.
  4. Fold the wet mixture into the dry ingredients until just combined.
  5. Gently fold in grated apples.
  6. Pour batter into prepared pan and bake for 35–40 minutes until toothpick comes out clean.
  7. Cool for 10 minutes before transferring to a wire rack.
  8. For icing: melt butter with brown sugar and cream in a saucepan; whisk until smooth and drizzle over warm cake.
