  • 4 lbs chuck beef
  • 2 cups red apple vinegar
  • 1 cup beef broth
  • 1 whole onion (diced)
  • 1 cup carrots (cubed small)
  • 1 tbsp tomato paste
  • 1 tbsp thyme (dried or fresh)
  • 3 bay leaves
  • 2 tbsp olive oil
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 350°F.
  2. Season the chuck beef generously with salt and pepper; let it sit at room temperature for about 30 minutes.
  3. Heat olive oil in a Dutch oven over medium-high heat and brown the beef on all sides for about 10 minutes. Transfer to a plate.
  4. Sauté diced onion and cubed carrots in the same pot for about 5 minutes. Stir in tomato paste until combined.
  5. Add red apple vinegar and beef broth; simmer for a few minutes, stirring well.
  6. Return the browned beef to the pot, add bay leaves and thyme, cover, and cook in the oven for approximately 2 ½ to 3 hours until tender.
