  • 6 garlic cloves, thinly sliced

  • 1 bundle scallions, thinly sliced
  • 4 tsp kosher salt
  • Freshly ground black pepper, to taste
  • 10 cups water
  • 1/4 cup black rice vinegar
  • 1/4 cup soy sauce
  • 2 tbsp toasted sesame oil
  • 8 oz dried ramen noodles or curly noodles
  • 1 cup carrot, cut into thin matchsticks
  • Crispy chili oil, to taste

Instructions

  1. Prepare the ingredients by chopping garlic, ginger, scallions, and carrots.
  2. In a large pot over medium heat, add chicken thighs and water; bring to a boil. Reduce heat and simmer for about 15 minutes until cooked through. Remove chicken and shred it once cooled.
  3. In the same pot, sauté garlic and ginger for about 2 minutes until fragrant. Add scallion whites along with salt and pepper.
  4. Pour in water, black rice vinegar, and soy sauce; bring back to a gentle boil.
  5. Add noodles and carrots; cook according to package instructions until tender.
  6. Return shredded chicken to the pot; stir in toasted sesame oil. Adjust seasoning if needed and serve hot with scallion greens and crispy chili oil.
