  • 1 lb dried pinto beans
  • 4 cups chicken stock
  • 1 bottle beef broth (preferably Mexican)
  • 1 pound salt beef (or chicken bone)
  • 6 slices turkey bacon, chopped
  • 1 medium onion, chopped
  • 2 jalapeño peppers, seeded and finely chopped
  • 3 cloves garlic, minced
  • Fresh cilantro, tomatoes, cumin, oregano, salt, and pepper for seasoning

Instructions

  1. Soak the pinto beans overnight in plenty of water; drain them the following day.
  2. In a large pot, add soaked beans with chicken stock, beef broth, water, and salt beef. Simmer on low heat for about 1½ hours.
  3. In a skillet over medium-high heat, cook chopped turkey bacon until crispy; transfer to a paper towel-lined plate.
  4. Sauté onions, jalapeños, and garlic in the same skillet until soft (about 3-4 minutes).
  5. Add the cooked turkey bacon and sautéed vegetables to the pot with beans. Stir in cilantro, tomatoes, cumin, oregano, black pepper, and additional salt to taste.
  6. Continue simmering for another 1½ hours or until beans are tender; add more water if needed to maintain a soupy consistency.
