  • 1 lb steak (chuck)
  • 3 russet potatoes
  • 1/2 cup scallions (finely chopped)
  • 1/4 cup cilantro (finely chopped)
  • 2 cups precooked corn meal (Harina PAN brand)
  • 1 teaspoon cumin
  • 1 tablespoon vegetable oil
  • 1/4 cup red onion (diced)
  • 1/4 cup red bell pepper (diced)
  • 3 garlic cloves (minced)
  • 2 roma tomatoes (chopped)
  • 1 teaspoon paprika
  • 1/4 cup water
  • 1/4 cup white vinegar
  • Salt and pepper to taste

Instructions

  1. Prepare the filling by cooking the diced steak in a frying pan over medium heat until browned. Add red onions, bell peppers, garlic, cumin, salt, and pepper; cook until vegetables soften. Boil russet potatoes until tender, then mash and combine with the beef mixture along with scallions, cilantro, tomatoes, hot sauce, water, and vinegar.
  2. For the dough, mix precooked corn meal with salt and chicken bouillon in a bowl. Gradually add water to form a smooth dough; let rest for 15 minutes.
  3. Roll out dough into circles, fill each with the beef-potato mixture, fold over to seal edges.
  4. Fry empanadas in heated oil until golden brown on both sides; drain on paper towels.
