  • 1 cup long-grain white rice (rinsed)
  • 2 cups chicken or vegetable broth
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 medium tomato (diced)
  • 1/4 cup tomato sauce
  • 1/2 cup frozen peas (optional)
  • 2 tablespoons vegetable oil
  • Salt (to taste)
  • Fresh cilantro (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a large skillet over medium heat, add vegetable oil and sauté the chopped onion until translucent. Add minced garlic and cook until fragrant.
  3. Stir in the rinsed rice, sautéing for about 2-3 minutes until slightly golden.
  4. Pour in the broth, diced tomatoes, and tomato sauce; stir well and bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 18-20 minutes or until all liquid is absorbed.
  6. Remove from heat, add frozen peas if desired, cover for an additional 5 minutes, then fluff with a fork. Garnish with fresh cilantro and serve with lime wedges.
