  • 3 cups butternut squash, peeled and cubed
  • 340 g Brussels sprouts, halved
  • 225 g bow tie pasta
  • 340 g cooked chicken sausage (or turkey)
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • ¼ teaspoon smoked paprika

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Toss butternut squash with olive oil, salt, and pepper; roast on a parchment-lined baking sheet for 15-20 minutes until tender.
  3. Roast Brussels sprouts tossed with olive oil, salt, and pepper for 20-30 minutes until crispy.
  4. Cook bow tie pasta in salted boiling water according to package instructions until al dente; reserve some pasta water before draining.
  5. In a skillet over medium heat, sauté sliced chicken sausage until browned; set aside.
  6. In the same skillet, cook minced garlic until fragrant; add butter to melt before tossing in cooked pasta along with reserved pasta water, seasoning with salt, pepper, and smoked paprika.
  7. Combine roasted vegetables and sausage into the skillet; mix gently before serving hot.
