  • 1 1/3 cup refried beans
  • 1 1/3 cup salsa

  • 23 jalapeños (diced)
  • 68 large taco-sized flour tortillas
  • Butter (for brushing)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine shredded chicken, refried beans, salsa, cheese, chopped green onions, and diced jalapeños.
  3. Spread the filling in the center of each tortilla. Fold the bottom edge up over the filling, fold in the sides tightly, and roll up from the bottom without overfilling.
  4. Place chimichangas seam-side down on a baking sheet and brush tops with melted butter.
  5. Bake for 15 minutes, flip carefully, then bake for an additional 10 minutes until golden brown.
