  • 2 tbsp unsalted butter
  • 3 oz goat cheese
  • 1/3 cup fresh cranberries
  • 2 tbsp honey (plus more for drizzling)
  • Ground cinnamon (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Halve and core the pears, then trim bottoms for stability.
  3. Place pear halves cut-side up in a baking dish and top each with a small pat of butter.
  4. Roast in the oven for about 20 minutes until golden brown and fork-tender.
  5. Simmer cranberries with honey in a saucepan over low heat until they burst slightly.
  6. Fill each roasted pear half with goat cheese and top with the cranberry mixture.
