  • 1 ½ pounds ground beef
  • 1 can kidney beans (15 oz, drained)
  • 1 can pinto beans (15 oz, drained)
  • 1 can black beans (15 oz, drained)
  • 1 red onion (chopped)
  • 1 red bell pepper (seeded and chopped)
  • 2 cups beef stock
  • 1 can fire-roasted tomatoes (15 oz)
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon oregano (dried)
  • 2 teaspoons cumin
  • 1 tablespoon cocoa powder
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper (ground)
  • 1 ½ teaspoons smoked paprika
  • ½ teaspoon ground coriander
  • 1 tablespoon chili powder
  • Sour cream
  • Cilantro
  • Cheese (shredded)

Instructions

  1. In a large pot over medium heat, cook the turkey bacon until crisp. Remove from pot.
  2. Sauté chopped onion and bell pepper in the same pot until tender.
  3. Add ground beef; cook until browned.
  4. Drain excess grease and return cooked turkey bacon to the pot.
  5. Stir in remaining ingredients; bring to a boil.
  6. Reduce heat to low and simmer for at least 45 minutes.
  7. Serve hot with desired toppings.
