  • 56 persian cucumbers, diced
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped parsley
  • Salt and pepper, to taste
  • 1/4 cup extra virgin olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 1 teaspoon grated lemon peel

Instructions

  1. Cook 8 ounces of dried orzo pasta in a large pot of salted boiling water until al dente (about 8 minutes). Drain and let cool.
