  • 500 g sunflower oil
  • 6 shallots (thinly sliced)
  • 10 garlic cloves (thinly sliced)
  • 3 tbsp chili flakes
  • 1 tbsp chili powder
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar

Instructions

  1. Heat sunflower oil in a deep pan over medium heat. Add sliced shallots and garlic; fry until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
  2. In a heatproof bowl, mix chili flakes, chili powder, brown sugar, salt, cinnamon stick, star anise, and bay leaves.
  3. Pour the hot oil over the spice mixture; stir gently to infuse flavors.
  4. Once cooled slightly, add fried shallots and garlic to the bowl; mix well.
  5. Stir in soy sauce and sesame seeds until evenly combined.
  6. Allow to cool completely before transferring into sterilized jars. Seal and refrigerate for future use.
