  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, quartered and sliced
  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 1 can (15 oz) tomato sauce
  • 1 dried bay leaf
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon red pepper flakes (optional)
  • 4 cups low sodium vegetable broth
  • 1 cup water
  • 1 cup dry ditalini pasta

Instructions

  1. In a large pot over medium heat, heat the olive oil. Add the diced onion, minced garlic, and sliced carrots; sauté for 5–6 minutes until softened.
  2. Stir in the rinsed cannellini beans and tomato sauce along with bay leaf, basil, parsley, oregano, black pepper, and optional red pepper flakes.
  3. Pour in the vegetable broth and water; bring to a boil.
  4. Once boiling, add the ditalini pasta and reduce heat to simmer for 6–7 minutes until the pasta is al dente. Remove the bay leaf before serving.
  5. Adjust seasoning as desired and serve hot.
