  • 4 large portobello mushrooms
  • 2 tablespoons balsamic vinegar
  • 2.5 tablespoons extra virgin olive oil
  • 2 tablespoons low sodium soy sauce
  • 3 garlic cloves, minced
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 0.33 teaspoon ground cumin
  • 0.33 teaspoon smoked paprika
  • Freshly ground black pepper, to taste
  • Cayenne pepper, optional, to taste

Instructions

  1. In a baking dish, whisk together balsamic vinegar, olive oil, soy sauce, minced garlic, onion powder, paprika, ground cumin, smoked paprika, black pepper, and cayenne pepper if desired.
  2. Add portobello mushrooms to the marinade and brush thoroughly to coat all sides. Let marinate for at least 10 to 15 minutes.
  3. Preheat a grill pan or large non-stick skillet over medium-high heat and lightly coat with cooking spray.
  4. Grill the marinated mushrooms for about 4 to 5 minutes on each side until golden brown. Brush with remaining marinade while cooking.
