  • 1/4 cup granulated sugar (for the cream cheese swirl)
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together the flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, mix together the pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla until smooth. Gradually incorporate the dry ingredients until just combined.
  4. In another bowl, beat the cream cheese until smooth; add granulated sugar, egg yolk, and vanilla. Mix until well blended.
  5. Fill each muffin cup three-quarters full with batter and top with about one tablespoon of cream cheese mixture. Swirl gently with a toothpick.
  6. Bake for 18 to 20 minutes or until a toothpick inserted comes out clean with a few moist crumbs attached.
