  • 2 large eggs
  • 1/2 cup vegetable oil (or melted butter)
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt. Set aside.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil (or melted butter), and vanilla extract until well combined. Gradually add the dry ingredients until just mixed.
  4. In another bowl, beat room temperature cream cheese until smooth. Add sugar, egg yolk, and vanilla extract; mix until fully combined.
  5. Fill muffin tins about three-quarters full with batter and top each with a tablespoon of cream cheese mixture. Swirl gently using a toothpick.
  6. Bake for 18 to 20 minutes or until a toothpick inserted comes out clean with moist crumbs attached.
