  • 1 1/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 2 tsp lemon juice
  • 2 cups blackberries
  • 1/4 cup sugar (or sweetener)
  • 2 tbsp water
  • 1 1/2 cups cold heavy cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. Beat egg whites until soft peaks form; gradually add sugar until stiff peaks form. Fold in cornstarch, lemon juice, and food coloring.
  3. Spoon or pipe meringue onto prepared baking sheet.
  4. Bake for about 60 minutes until dry; cool in the oven.
  5. Cook blackberries, sugar, lemon juice, cornstarch, and water over medium heat until thickened; let it cool.
  6. Whip heavy cream with powdered sugar until soft peaks form.
  7. Assemble by placing the meringue on plates, adding blackberry filling and topping with whipped cream.
