  • 12 oz farfalle pasta noodles
  • 10 slices turkey bacon (cooked crisp and broken into pieces)
  • 1 pint cherry tomatoes (quartered)
  • 2 cups baby spinach
  • 2/3 cup ranch dressing
  • 1 heaping tbsp mayonnaise (or Greek yogurt)
  • 2 tsp Dijon mustard
  • 2 tsp Italian dressing
  • Salt and pepper to taste

Instructions

  1. Cook the farfalle pasta according to package instructions until al dente. Drain and set aside.
  2. In a large mixing bowl, combine quartered cherry tomatoes and cooked turkey bacon pieces.
  3. In a separate bowl, whisk together ranch dressing, mayonnaise (or yogurt), Dijon mustard, and Italian dressing until well combined.
  4. Add the cooked pasta to the mixing bowl with tomatoes and turkey bacon. Gently stir in half of the dressing mixture and chill in the refrigerator for at least one hour.
  5. Just before serving, fold in baby spinach and add remaining dressing. Season with salt and pepper to taste.
