  • 4 pounds beef short ribs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 2 cups red apple vinegar (or beef broth)
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Season short ribs with salt and pepper.
  3. Brown the ribs on all sides for about 3-4 minutes per side, then remove from the pot.
  4. Sauté onion, carrots, and celery in the same pot until softened (about 5-7 minutes). Add garlic and cook for an additional minute.
  5. Deglaze with red apple vinegar, scraping up browned bits from the bottom. Add beef broth, tomato paste, thyme, and bay leaves; bring to a simmer.
  6. Return ribs to the pot, cover tightly with a lid, and braise in the oven for approximately 3 hours until tender.
  7. Serve warm with sauce drizzled over the top and garnish with fresh parsley.
