  • 3 cups (333g) cake flour
  • 1 cup (200g) granulated sugar
  • 1 cup (200g) light brown sugar, firmly packed
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 1 ½ cups (354ml) buttermilk, room temperature preferred
  • 2 large eggs, room temperature preferred
  • 1 ½ tsp vanilla extract
  • 1 ½ cups (160g) pecan halves, very finely chopped
  • 1 ½ cups (340g) unsalted butter, softened (for icing)
  • 6 oz cream cheese, softened
  • ⅓ cup (66g) light brown sugar, firmly packed (for icing)
  • 1 ½ tsp vanilla extract (for icing)
  • ¼ tsp salt (for icing)
  • 4 ½ cups (562g) powdered sugar
  • 1 tbsp heavy cream
  • ⅓ cup (35g) pecan halves, very finely chopped, optional

Instructions

  1. Prepare the browned butter by melting it in a saucepan over medium-low heat until golden specks form. Let cool.
  2. Preheat your oven to 350°F (175°C) and prepare three 8-inch round cake pans with grease and parchment paper.
  3. In a large bowl, whisk together cake flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  4. Add the cooled browned butter to the dry mixture and beat until combined.
  5. In another bowl, mix buttermilk, eggs, and vanilla until smooth; then gradually add to the butter-flour mix.
  6. Gently fold in finely chopped pecans.
  7. Divide batter among prepared pans and bake for 30 minutes or until a toothpick comes out clean. Cool before frosting.
  8. For the icing: Beat softened butter and cream cheese until smooth; add brown sugar, vanilla, salt, powdered sugar, and heavy cream until fluffy.
  9. Assemble by layering cakes with icing in between; frost the outside and sprinkle with pecans if desired.
