  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter
  • 1/2 cup creamy peanut butter
  • 3 large egg whites
  • 1 1/4 cups all-purpose flour
  • 5 oz semi-sweet chocolate chips
  • 6 tbsp heavy whipping cream
  • 3/4 cup crushed Butterfingers

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a mixing bowl, cream together the unsalted butter, sugar, brown sugar, and creamy peanut butter until fluffy. Gradually mix in the egg whites.
  3. In another bowl, whisk together the all-purpose flour, baking powder, and salt. Alternate adding this dry mixture with milk and water into the wet ingredients until just combined.
  4. Gently fold in the crushed Butterfingers.
  5. Fill each cupcake liner about two-thirds full with batter and bake for 20 minutes or until a toothpick comes out clean.
  6. While cooling, prepare the ganache by heating heavy whipping cream and pouring it over semi-sweet chocolate chips; stir until smooth.
  7. Once cupcakes are cool, frost with peanut butter frosting and drizzle warm ganache on top.
