  • 3 envelopes unflavored powdered vegan gelatin (about 7 ½ teaspoons)
  • 1 ½ cups granulated sugar
  • 1 cup light corn syrup
  • 1 teaspoon peppermint extract
  • ¼ teaspoon kosher salt
  • 12 teaspoons red food coloring
  • â…“ cup powdered sugar or cornstarch (for rolling)

Instructions

  1. Grease a 9×9-inch baking pan and set aside.
  2. In your stand mixer bowl, add â…š cup cold water and sprinkle the vegan gelatin on top. Let it bloom for about 5 minutes.
  3. In a medium saucepan over medium-high heat, combine sugar, corn syrup, and remaining water. Stir until dissolved and bring to a boil until it reaches exactly 240°F on a candy thermometer.
  4. Pour the hot sugar mixture into the bloomed gelatin while mixing on low speed. Add peppermint extract and salt.
  5. Gradually increase the speed to high, whipping until stiff peaks form (about 10-12 minutes).
  6. While still warm, add red food coloring droplets and swirl them through the mixture.
  7. Allow the mixture to sit at room temperature for at least 4 hours or refrigerate for about 2 hours until firm.
  8. Dust your work surface with powdered sugar or cornstarch, slice around the edges of the pan with a knife, turn out onto the surface, and cut into pieces.
  9. Roll each piece in powdered sugar or cornstarch to prevent sticking.
