  • 3 large yellow or sweet onions
  • 3 tablespoons unsalted butter
  • 1 cup crumbled feta cheese
  • Fresh thyme leaves (optional)
  • Balsamic glaze (for serving)

Instructions

  1. Activate the yeast by combining warm water, yeast, and sugar in a bowl. Let it sit for about 5-10 minutes until foamy.
  2. Mix bread flour and kosher salt in another bowl.
  3. Combine wet and dry ingredients, kneading until smooth (6-8 minutes with a mixer or about 10-12 minutes by hand).
  4. Allow the dough to rise in a greased bowl for 60-90 minutes until doubled.
  5. Caramelize sliced onions in butter and olive oil over low heat for about 30-45 minutes until golden brown.
  6. Preheat the oven to 450°F and prepare a baking stone or inverted baking sheet.
  7. Shape the dough into two flatbreads, topping each with caramelized onions and feta cheese.
  8. Bake for 12-15 minutes until golden brown.
