  • 4 large leeks (white and light green parts only), sliced thinly
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/2 teaspoon black pepper
  • 1 1/2 cups grated cheddar cheese
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon fresh thyme (optional), chopped
