  • 200 ml lukewarm milk
  • 15 g honey
  • 9 g instant yeast
  • 1 large egg
  • 30 ml sunflower oil
  • 600 g all-purpose flour
  • 700 g chicken fillet, sliced into strips
  • 40 g grated Parmesan cheese
  • 2 g cayenne powder
  • 3 g onion powder
  • 3 g garlic powder
  • 1 g black pepper powder
  • 15 g sambal oelek
  • 10 ml soy sauce
  • 150 g cornstarch
  • 120 g mayonnaise
  • 75 g chili sauce
  • Milk for brushing
  • Oil for frying

Instructions

  1. Prepare the dough: Mix warm water, milk, honey, and yeast. Let sit until foamy. Add egg, oil, and flour; knead until smooth. Incorporate salt and butter. Cover and rise for an hour.
  2. Shape the buns: Divide dough into portions, shape into rolls, and let rise again for 30 minutes.
  3. Add cheese topping: Mix Parmesan with spices and sprinkle on top of each bun.
  4. Bake: Preheat oven to 375°F (190°C) and bake for 15–18 minutes until golden brown.
  5. Marinate chicken: Combine chicken with seasonings and marinate for at least 1–2 hours.
  6. Coat and fry chicken: Dredge in cornstarch mix and fry until golden brown.
  7. Prepare sauce: Mix mayonnaise with chili sauce.
  8. Assemble: Slice buns open, fill with chicken strips, and add sauce.
