Scale
  • 2 tablespoons extra virgin olive oil
  • 1 large onion, halved and sliced (about 2 cups)
  • 1 teaspoon vegetarian Worcestershire sauce
  • 5 cups cauliflower slices (about 1 medium head)
  • 0.5 cup shredded Gruyère cheese
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon salt
  • 0.75 teaspoon dried thyme
  • 0.5 teaspoon ground pepper, divided

Instructions

  1. Preheat oven to 450°F (232°C) and coat a baking sheet with cooking spray.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat; add sliced onions. Cook for about 5 minutes, then stir in Worcestershire sauce, thyme, and pepper. Reduce heat to medium-low and cook until golden brown, around 10-15 minutes.
  3. Arrange cauliflower slices on the baking sheet. Mix remaining olive oil with garlic powder and salt; brush over the slices.
  4. Roast for about 10 minutes until tender. Top each slice with caramelized onions and Gruyère cheese; return to oven until cheese melts, about 2-3 minutes.
