  • 2 tablespoons sugar
  • 3 tablespoons fruit juice (instead of amaretto)
  • 1 cup strong brewed coffee, cooled
  • 16 ladyfingers
  • 1 cup heavy cream
  • 8 ounces mascarpone cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Cocoa powder for dusting

Instructions

  1. Combine cherries, sugar, and fruit juice in a bowl; let sit for 15 minutes.
  2. Cool the brewed coffee completely.
  3. Whip the heavy cream until stiff peaks form.
  4. Mix mascarpone with powdered sugar and vanilla until smooth.
  5. Gently fold whipped cream into the mascarpone mixture.
  6. Dip ladyfingers quickly into cooled coffee.
  7. Layer dipped ladyfingers in a dish, followed by half the mascarpone mixture and half the cherry mixture.
  8. Repeat layers with remaining ingredients.
  9. Refrigerate for at least 4 hours or overnight before serving.
  10. Dust with cocoa powder before serving.
