  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups unbleached flour
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1/2 cup quick oats
  • 1 cup mini chocolate chips
  • 1 1/4 cups crushed Cadbury Mini Eggs (divided)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract; mix until well combined.
  3. In another bowl, whisk together the flour, baking soda, salt, and oats. Gradually add this dry mixture to the wet ingredients until just combined.
  4. Fold in mini chocolate chips and most of the crushed Cadbury Mini Eggs (reserve some for topping).
  5. Drop rounded balls of dough onto a lined baking sheet, spacing them about two inches apart. Sprinkle with reserved crushed Cadbury Mini Eggs.
  6. Bake for approximately 9 minutes or until lightly golden around the edges. Allow cooling on the baking sheet before transferring to wire racks.
