  • 4 strips Turkey Bacon
  • 1 small yellow onion
  • 2 celery stalks
  • 2 garlic cloves
  • 1/4 cup all-purpose flour
  • 3 cups chicken broth
  • 2 cups Yukon Gold potatoes
  • 1/2 tsp dried thyme
  • 1/2 tsp dried parsley
  • 1 1/2 cups cooked shredded chicken
  • 1 1/2 cups corn (fresh, frozen, or canned)
  • 1 cup half & half
  • 1/3 cup sour cream

Instructions

  1. Cook Turkey Bacon in a large pot over medium heat until crispy. Remove and set aside.
  2. Sauté diced onion in the remaining bacon fat until translucent. Add chopped celery and minced garlic; cook until fragrant.
  3. Stir in flour to combine well, then gradually add chicken broth while stirring to avoid lumps.
  4. Add diced potatoes, thyme, parsley, salt, and pepper; simmer until potatoes are tender.
  5. Incorporate shredded chicken and corn; cook for another 5–7 minutes until heated through.
  6. Reduce heat before adding half & half and sour cream; simmer gently until warmed but not boiling.
