  • 3 large eggs
  • ¼ cup vegetable oil
  • 4 boneless, skinless chicken breasts (halved)
  • 1 large lemon (sliced)
  • 1 cup low-sodium chicken broth
  • ½ cup white grape juice
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons unsalted butter
  • Fresh parsley for garnish

Instructions

  1. In a shallow dish, combine flour, salt, and pepper. In another dish, beat the eggs.
  2. Dip each chicken breast into the flour mixture followed by the egg mixture.
  3. Heat vegetable oil in a large skillet over medium heat and fry the coated chicken until golden brown on both sides. Set aside on paper towels.
