  • 2 boneless chicken breasts
  • 1 cup flour
  • 1 egg (lightly beaten)
  • 1 cup panko bread crumbs
  • Vegetable oil (for frying)
  • 1 tablespoon olive oil
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 2 carrots (sliced)
  • 2 potatoes (diced)
  • 2 cups chicken stock
  • 1 tablespoon honey
  • 2 tablespoons soy sauce
  • Curry roux (to taste)

Instructions

  1. Prepare the chicken by slicing it horizontally and pounding it to about ½ inch thick. Season both sides with salt and pepper.
  2. Set up three shallow dishes: one with flour, one with beaten egg, and another with panko breadcrumbs. Coat each piece of chicken in flour, then egg, and finally panko until fully covered.
  3. Heat vegetable oil in a deep frying pan until it reaches around 340°F (170°C). Fry the coated chicken for about 3 minutes on each side until golden brown. Place on a wire rack to cool slightly before slicing.
  4. In a medium pot, heat olive oil over medium-high heat and sauté chopped onions and minced garlic until translucent. Add sliced carrots and diced potatoes; cook for a few more minutes.
  5. Pour in chicken stock, honey, soy sauce, and bring to a boil before simmering until vegetables are soft. Add curry roux and stir until dissolved; simmer until thickened.
  6. Serve sliced chicken katsu over rice with generous spoonfuls of curry sauce on top.
