  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp Thai red curry paste
  • 1 can coconut milk
  • Fresh herbs (cilantro and green onions)
  • 2 tbsp chopped cilantro
  • 2 green onions, finely chopped
  • 1/2 cup breadcrumbs
  • 1 egg
  • Salt and pepper, to taste
  • 1 tbsp vegetable oil (for frying)
  • 1 tbsp vegetable oil (for sauce)
  • 1 tsp turmeric powder
  • 1/2 tsp red chili flakes (optional)

Instructions

  1. In a mixing bowl, combine ground chicken, minced garlic, grated ginger, curry paste, breadcrumbs, egg, salt, and pepper. Mix until just combined.
  2. Form small meatballs (about 1 inch in diameter).
  3. Heat vegetable oil in a frying pan over medium heat and brown the meatballs on all sides for about 5-6 minutes.
  4. In the same pan, add more oil if needed and sauté garlic until fragrant. Stir in red curry paste and cook for another minute.
  5. Add coconut milk to the pan and bring to a simmer.
  6. Return the meatballs to the sauce and let them simmer together for about 10 minutes.
