Instructions

  1. Drain and rinse the canned chickpeas thoroughly under cold water. Set aside to drain completely.
  2. Dice the cucumber.
  3. Halve the cherry tomatoes.
  4. Chop the bell pepper into small pieces.
  5. Finely chop the red onion. Aim for uniform sizes for a pleasing presentation and even flavor distribution.
  6. In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, bell pepper, and Kalamata olives.
