  • 1 onion
  • 2 bell peppers (yellow and red)
  • 1 tablespoon olive oil
  • 2 tablespoons tomato paste
  • 500 ml vegetable broth
  • 100 g dried red lentils
  • 1 can kidney beans (drained, 500 g)
  • 1 can corn (drained, 285 g)
  • 800 g canned chopped tomatoes
  • Salt and pepper to taste
  • 2 teaspoons sweet paprika powder
  • 1/2 teaspoon cumin

Instructions

  1. Finely chop the onion and dice the bell peppers.
  2. In a pot, heat the olive oil over medium heat. Add onions and bell peppers; sauté until soft.
  3. Stir in tomato paste and lentils; cook for about 2 minutes.
  4. Add vegetable broth, kidney beans, corn, and chopped tomatoes. Bring to a boil.
  5. Reduce heat and let simmer for 20 minutes. Season with salt, pepper, paprika, and cumin before serving.
