  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon chipotle chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1 cup cooked white or brown rice
  • 1 cup black beans (drained and rinsed)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup corn kernels (optional)
  • 1/4 cup chopped cilantro (optional)
  • 1/2 cup chipotle ranch dressing

Instructions

  1. In a mixing bowl, combine olive oil, lime juice, chipotle chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper.
  2. Add chicken breasts to the marinade and coat evenly. Marinate for at least 15 minutes.
  3. Preheat the grill or grill pan over medium-high heat and grill the chicken for about 6-7 minutes on each side or until fully cooked. Let rest before slicing.
  4. On each tortilla, layer rice, black beans, grilled chicken slices, cheese, lettuce, tomatoes (optional), corn (optional), and drizzle with chipotle ranch dressing.
