  • 1 cup firmly packed brown sugar
  • 3/4 cup granulated sugar
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 2 1/2 teaspoons vanilla extract

Instructions

  1. Melt the butter in a heavy-bottomed saucepan over medium heat until it turns golden and nutty. Let it cool to room temperature.
  2. In a separate bowl, mix together the flour, cornstarch, baking soda, and salt. Set aside.
  3. Cream the cooled butter with both sugars using a stand mixer on medium speed until combined.
  4. Add the egg, egg yolk, and vanilla extract to the butter-sugar mixture and beat until smooth.
  5. Gradually add the dry ingredients and mix until just combined; avoid overmixing.
  6. Chill the dough for at least one hour or up to 72 hours for enhanced flavor.
  7. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  8. Portion dough into balls and place them on prepared sheets about two inches apart.
  9. Bake for 8–10 minutes or until golden around the edges. Allow to cool slightly before transferring to a wire rack.
