  • 2 tbsp coconut oil (omit if using runny peanut butter)
  • 60ml maple syrup
  • 80g cornflakes (or crunchy cereal of choice)
  • Pinch of salt
  • 150g dark chocolate
  • 1 tsp coconut oil

Instructions

  1. Melt the peanut butter, coconut oil, maple syrup, and salt in a saucepan over low heat until combined.
  2. Remove from heat and fold in the cornflakes until fully coated.
  3. Press the mixture into molds or a lined loaf tin.
  4. Freeze for 2 hours until set, then remove from molds and slice if using a loaf tin.
  5. Melt the dark chocolate with coconut oil in a microwave or double boiler, stirring frequently to avoid burning.
  6. Dip the chilled bites into melted chocolate and place on parchment paper to cool.
  7. Refrigerate until the chocolate sets completely before serving.
