  • 55 g light brown sugar
  • 65 g granulated sugar
  • 1 teaspoon vanilla extract
  • 65 g plain flour
  • 15 g cocoa powder
  • 1 teaspoon baking powder
  • 75 g dark chocolate (melted)
  • 2¼ teaspoons powdered plant-based gelatin
  • 45 ml fresh lemon juice
  • 400 g fresh raspberries
  • 480 ml cold double cream

Instructions

  1. Preheat your oven to 180°C (350°F). Grease and line two 9-inch round cake pans.
  2. Whisk eggs, light brown sugar, granulated sugar, and vanilla until fluffy.
  3. In another bowl, whisk together flour, cocoa powder, baking powder, and salt, then fold into the egg mixture along with melted chocolate.
  4. Pour batter into prepared pans and bake for about 20 minutes or until a toothpick comes out clean. Let cool.
  5. For the mousse, dissolve gelatin in lemon juice. Blend raspberries with sugar until smooth.
  6. Whip cream until soft peaks form and gently fold in raspberry mixture and gelatin.
  7. Layer cooled cakes with mousse and refrigerate for at least 2 hours before serving.
