  • 2 teaspoons vanilla extract

  • 1 teaspoon salt
  • 1 ½ teaspoons cinnamon
  • ½ cup white chocolate chips
  • 1 teaspoon coconut oil

Instructions

  1. Combine almond butter, maple syrup, vanilla protein powder, vanilla extract, rolled oats, salt, and cinnamon in a mixing bowl. Stir until a thick batter forms.
  2. Line a baking sheet with wax paper and use a mini cookie scoop to portion out balls of batter. Roll them into smooth bites using your hands.
  3. In a microwave-safe bowl, melt white chocolate chips with coconut oil in 10-15 second increments until smooth.
  4. Drizzle melted chocolate over the energy bites and refrigerate for 1 hour until firm.
  5. Store in an airtight container in the refrigerator or freezer.
