  • 1 cup vegetable oil or melted butter
  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 2 cups all-purpose flour
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 cup chopped pecans (toasted if desired)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two loaf pans or one bundt pan.
  2. In a large bowl, whisk together vegetable oil (or melted butter), granulated sugar, eggs, vanilla extract, and buttermilk until smooth.
  3. In another bowl, combine all-purpose flour, ground cinnamon, baking powder, baking soda, and salt; mix well.
  4. Gradually add dry ingredients to the wet mixture; stir until just combined. Gently fold in chopped pecans.
  5. Pour the batter into prepared pan(s) and bake for approximately 45-55 minutes (loaves) or 55-65 minutes (bundt), until a toothpick inserted comes out clean.
  6. Allow cooling in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
