  • 2 1/4 to 2 1/2 lb organic chuck beef
  • 1 medium onion
  • 2 carrots
  • 2 celery stalks
  • 1 large parsnip
  • 6 garlic cloves
  • Olive oil
  • 1 1/2 tsp paprika
  • 5 tbsp all-purpose flour
  • 1 tbsp tomato paste
  • 1/2 cup red apple vinegar
  • 2 cups beef broth
  • 8 oz baby yellow potatoes
  • 3/4 cup petite peas
  • 1 tbsp chopped fresh parsley
  • 1 tsp fresh thyme leaves
  • 1 sheet puff pastry
  • Kosher salt, to taste
  • Black pepper, to taste
  • 2 tsp italian herb blend
  • 2 small bay leaves
  • 1/2 tsp dried thyme
  • 1/4 tsp ground white pepper

Instructions

  1. Season beef chunks with salt, pepper, and paprika. Brown in olive oil in a Dutch oven over medium-high heat.
  2. Sauté chopped onion, carrots, celery, parsnip, and minced garlic in the same pot until softened.
  3. Sprinkle flour over vegetables, add tomato paste, vinegar, herbs, bay leaves, and broth; bring to a simmer.
  4. Return beef and halved baby potatoes; cover and simmer for about 90 minutes until tender.
  5. Preheat oven according to puff pastry instructions. Remove bay leaves; stir in peas and herbs before transferring filling to a baking dish.
  6. Roll out puff pastry and cover the filling. Brush with beaten egg yolk.
  7. Bake until golden brown on top.
