Instructions

  1. Boil the eggs: Place eggs in a saucepan, cover with water, bring to a boil, then cover and let sit for 10-12 minutes. Transfer to an ice-water bath.
  2. Peel and slice: Cool the eggs for a few minutes before peeling and cutting them in half lengthwise.
  3. Make the filling: In a bowl, mash egg yolks with avocado, mayonnaise, Dijon mustard, sriracha, smoked paprika, salt, and pepper until smooth.
  4. Fill the egg whites: Pipe filling into each egg white half using a piping bag or zip-top bag.
