  • 200ml heavy cream
  • 120ml coconut milk
  • 80g mascarpone
  • 80g powdered sugar
  • 2 vegan gelatin sheets (4g)
  • 140g softened butter
  • 160g all-purpose flour
  • 25g unsweetened cocoa powder
  • Grated coconut for garnish
  • Gooey cocoa spread

Instructions

  1. Prepare the Coconut Mousse: Whip cold heavy cream and mascarpone with powdered sugar until fluffy. Soak vegan gelatin sheets, then dissolve in warm coconut milk and fold into the whipped mixture. Pour into hemisphere molds, adding cocoa spread halfway through. Freeze for at least 6 hours.
  2. Make Cocoa Breton Shortbread: Mix butter, flour, cocoa powder, powdered sugar, baking powder, salt, and egg yolks to form a dough. Chill, roll out, cut into circles, and bake at 180°C (356°F) for about 10 minutes. Cool completely.
  3. Assemble: Remove the mousse domes from molds and place on shortbread bases. Let them thaw at room temperature for 2 hours and garnish with grated coconut before serving.
