  • 2 lbs beef chuck, cut into large cubes
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1 tsp ground cumin
  • 1/2 tsp chili powder (optional)
  • 1 can (13.5 oz) coconut milk

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté chopped onion until translucent (about 5 minutes). Add minced garlic and grated ginger; cook for another minute until fragrant.
  2. Stir in red curry paste, turmeric, cinnamon, cumin, and optional chili powder. Mix well before adding cubed beef.
  3. Increase heat slightly to brown beef on all sides (about 8-10 minutes).
  4. Pour in coconut milk until beef is just covered. Bring to a simmer, then reduce heat to low and cover. Cook for 1.5 to 2 hours until beef is tender.
  5. Adjust seasoning if needed before serving over rice or with naan.
