  • 2 whole garlic bulbs (about 20 cloves), peeled
  • 2 tablespoons olive oil
  • 1 medium yellow onion, sliced
  • 4 cups vegetable or chicken broth
  • 1 cup water
  • 2 sprigs fresh thyme (or 1/2 teaspoon dried thyme)
  • 1 bay leaf
  • Salt and black pepper, to taste
  • Optional: 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place garlic cloves in a baking dish, drizzle with 1 tablespoon of olive oil, and roast for 25–30 minutes until soft.
  3. In a large pot, heat remaining olive oil over medium heat. Sauté sliced onion until soft and translucent (about 5 minutes).
  4. Add roasted garlic, broth, water, thyme, bay leaf, salt, and pepper to the pot. Bring to a boil.
  5. Reduce heat and simmer for about 20 minutes to blend flavors.
  6. Remove thyme and bay leaf; blend the soup until smooth using an immersion blender.
  7. Stir in heavy cream if desired; adjust seasoning before serving.
