  • 1 cup mushrooms, sliced
  • 1 cup carrots, diced
  • 1 cup peas
  • 1/2 cup onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 package refrigerated pie crusts

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large skillet over medium heat, heat olive oil. Sauté onions until translucent. Add garlic, mushrooms, carrots, and peas; cook until tender.
  3. Sprinkle flour over the vegetables and stir well. Gradually add chicken broth while continuously stirring until thickened. Fold in chicken, thyme, salt, and pepper.
  4. Roll out one pie crust into a baking dish and pour in the filling mixture. Cover with another layer of crust, sealing edges well and cutting slits for steam escape.
  5. Bake for 30-35 minutes until the crust is golden brown. Allow cooling slightly before serving.
